Griddled Nectarine and Feta Salad

Grilled fruit goes really well in lettuce and feta salads. This sweet and sour combination is enhanced with peppery rocket and radishes and brought together with peanut butter, lime and tamari dressing. It’s nutritious, quick and flavoursome.

Ingredients
- 2 nectarines
- 1 little gem lettuce
- 2 large handfuls of rocket
- 6-8 radishes
- 150g of feta cheese
For the dressing:
- 1 tablespoon of crunchy peanut butter
- 1 tablespoon of Kikkoman Tamari Gluten Free Soy Sauce
- Juice of 1 lime
- 1-2 tablespoon of water
- 1 teaspoon of agave or honey
Method
Heat a griddle pan on high heat. Slice the nectarines into wedges and griddle on both sides until they begin to soften. Set them aside to cool while you make the rest of the salad.
Separate the leaves from a little gem lettuce, wash and pat dry. Quarter the radishes.
To make the dressing, combine the peanut butter, tamari, lime juice and agave until smooth and creamy. Add one to two tablespoons of water to thin it out slightly so it is easier to drizzle.
To plate, divide the lettuce, rocket, radish and griddled nectarines between the two plates. Crumble over the feta and drizzle half of the dressing over each salad.
