

Light and easy turkey meals
Five varied meals with turkey, veg and rice—easy to prep and full of mild but distinctive flavours, with Kikkoman Soy Sauce adding depth and an umami note to each of them.
Ingredients
Rice salad with courgette and egg


Step 1

100 g jasmine rice – 1 tbsp vegetable oil – 1 courgette – 1 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.5 tsp smoked paprika
Cook the jasmine rice according to the packet instructions. Slice the courgette and sauté in the vegetable oil with the Kikkoman Soy Sauce and smoked paprika for 3 minutes. Set aside.
Step 2

2 eggs – 2 tbsp plain yoghurt – 0.5 tsp smoked paprika – 0.5 tbsp Kikkoman Naturally Brewed Soy Sauce – 100 g tinned sweetcorn – 1 red onion
Fry the eggs in the same pan used for the courgette. Mix the yoghurt with the smoked paprika and Kikkoman Soy Sauce. Peel and chop the onion. In a lunchbox, layer a quarter of the cooked rice, then half the sautéed courgette, half the sweetcorn, and half the red onion, followed by another quarter of rice. Spoon over half the yoghurt sauce. Repeat for the second lunchbox.
Step 3

0.5 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.5 tsp pepper – 1 tbsp chopped spring onion
Place the fried eggs on top of lunchboxes. Sprinkle over the pepper, drizzle with the Kikkoman Soy Sauce and top with the chopped spring onions.
Tip
For a vegan version, swap the egg for grilled halloumi or avocado. The yoghurt and soy dressing also works well as a dip for roasted veg.
Lettuce wraps with turkey and dressing


Step 1

1 tbsp vegetable oil – 1 red onion, chopped – 150 g minced turkey – 1 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.25 courgette, thinly sliced – 6 large lettuce leaves – 50 g cherry tomatoes
Heat the vegetable oil in a pan and sauté half the chopped onion, turkey, Kikkoman Soy Sauce and courgette for about 5 minutes, until the liquid has evaporated. Spoon the turkey–courgette filling onto the lettuce leaves. Halve the cherry tomatoes, then place on top with the remaining onion.
Step 2

2 tbsp plain yoghurt – 0.5 tsp Kikkoman Naturally Brewed Soy Sauce
Mix the yoghurt with the Kikkoman Soy Sauce to make a simple dressing. Drizzle with the soy–yoghurt dressing and pack the wraps in a container.
Tip
You can swap the lettuce for a tortilla if you like. The dressing also works nicely with grilled veg or as a quick salad dressing.
Turkey and veg frittata


Step 1

1 tbsp vegetable oil – 0.5 red onion, chopped – 150 g minced turkey – 1 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.25 courgette, thinly sliced – 100 g tinned sweetcorn
Heat the vegetable oil in a pan and sauté the chopped onion, turkey, Kikkoman Soy Sauce and courgette for about 5 minutes, until the liquid has evaporated. Stir in the drained tinned sweetcorn and cook for 1 more minute, then leave to cool slightly.
Step 2

6 eggs – 2.5 tbsp plain yoghurt – 1 tbsp Kikkoman Naturally Brewed Soy Sauce – 1 tsp pepper – 1 tbsp vegetable oil
Whisk the eggs with the plain yoghurt, Kikkoman Soy Sauce and pepper. Add the cooled turkey and vegetable mixture and stir to combine. Heat the vegetable oil in an oven-safe frying pan, pour in the egg mixture and cook over a low heat for 5 minutes.
Step 3

100 g mozzarella cheese – 100 g cherry tomatoes
Arrange the halved cherry tomatoes cut-side up over the frittata and top with the torn mozzarella. Transfer the frying pan to a preheated oven at 180°C and bake for around 20 minutes, or until the egg is fully set.
Step 4

0.5 tbsp vegetable oil – 0.5 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.5 tsp honey – 100 g cherry tomatoes – 1 handful of lettuce leaves
Whisk together the vegetable oil, Kikkoman Soy Sauce and honey. Toss with the lettuce and halved cherry tomatoes. Serve on the side with the frittata.
Tip
This frittata also keeps well for lunch the next day—just pack it cold with the salad on the side.
Mini turkey patties with yoghurt dip


Step 1

200 g minced turkey meat – 1 egg (raw) – 1 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.5 tsp pepper – 3 tbsp Kikkoman Panko - Japanese style crispy bread crumbs – 1.5 tbsp vegetable oil
Mix the minced turkey, egg, Kikkoman Soy Sauce, pepper and 1 tbsp Kikkoman Panko. Shape into patties, coat with the remaining Kikkoman Panko and fry on each side in the vegetable oil until golden and cooked through.
Step 2

A few lettuce leaves – 0.5 red onion – 50 g tinned sweetcorn – 1 tbsp plain yoghurt – 0.25 tbsp Kikkoman Naturally Brewed Soy Sauce – 2 hard-boiled eggs
Slice the red onion thinly and toss with the lettuce and tinned sweetcorn in a bowl. Mix the yoghurt with the Kikkoman Soy Sauce to make a simple dressing, then add it to the salad and mix well. Quarter the eggs and place on top. Serve the patties with the salad.
Tip
Bake the patties instead of frying for a lighter option. The dip tastes even better when made a day ahead, as it allows the flavours to develop.
Turkey and courgette rice bowl


Step 1

1 tbsp vegetable oil – 1 red onion – 150 g minced turkey – 1 tbsp Kikkoman Naturally Brewed Soy Sauce – 0.5 tsp smoked paprika – 0.5 courgette
Sauté the chopped onion and sliced courgette in the vegetable oil. Add the minced turkey, Kikkoman Soy Sauce and smoked paprika. Cook for 3–4 minutes, until the meat is cooked through and the courgette is slightly tender.
Step 2

100 g tinned sweetcorn – 100 g jasmine rice – 1 tsp sesame seeds – 1 tbsp chopped spring onion – 0.5 tbsp Kikkoman Naturally Brewed Soy Sauce
Cook the rice according to the packet instructions. Layer the cooked rice, sweetcorn and sautéed meat with courgette and onion in a bowl. Sprinkle with the sesame seeds and spring onion, and drizzle with the Kikkoman Soy Sauce.
Tip
Also good cold—great for a packed or work lunch. For a low-carb twist, swap the rice for cauliflower rice or steamed broccoli.
