Sweet-sour tomato sauce
Clean vegetables, remove stems. Chop tomatoes into quarters, stir fry 30 minutes until water evaporates. Filter through sieve.
Peel yellow tomato, chop into small cubes. Chop garlic and onion very finely and add to tomato sauce along with yellow tomato. Cook on low heat and stir occasionally. Add all spices and cook 2-3 minutes. You can blend it until smooth or leave it with pieces of vegetables.
Pour the sauce into clean, dry glasses, cover with seals and lids and put to preheated oven. Bake in max. 120°C for about 30 minutes. Allow cooling down overnight; don’t turn up-side-down.
Sauce is perfect base for sauces for rice, noodles and other grains – with addition of other vegetables and meat or fish.
