This quick and easy meat-free pasta recipe is one of our favourite fusion dishes. Vegetarian Quorn mince is stir fried with pak choi and spinach, along with the Asian flavours of sesame oil and Kikkoman Soy Sauce. The Italian flavours are provided by tomato puree, garlic, parmesan, basil and spaghetti. All the ingredients complement each other well to create a tasty veggie dinner for any night of the week. You can add whatever vegetables you prefer. To make the dish vegan leave out the honey.

Ingredients

wholemeal spaghetti
2 tbsp
sesame oil

Quorn vegetarian mince

tomato purée

large pak choi, coarsely chopped

baby spinach
2 tbsp
honey
2 tbsp
chilli oil
vegetarian parmesan
basil leaves

Preparation

Step 1

Cook the spaghetti according to the instructions on the pack, until al dente. Drain and set aside.

Step 2

Heat 1 tbsp sesame oil in a wok on a medium heat and fry the Quorn vegetarian mince for 5-6 minutes, or until slightly browned. Stir in the tomato puree and garlic and fry for 1-2 minutes. Add the vegetables and fry until soft. Add the soy sauce, honey, chilli oil and black pepper. Add the spaghetti and mix well. Serve with grated vegetarian parmesan, a little fresh basil and extra chilli oil.
