Kikkoman teams up with a London cookery school

Based in Wandsworth, The Avenue Cookery School is a family-run cookery school offering more than 80 different classes throughout the year, covering a wide range of cuisines and cooking styles.
Asian cooking classes are particularly popular, with students able to learn the art of making everything from Sushi, and Bao to delicious Thai dishes.

The sessions are highly hands-on and sociable, giving students the opportunity to prepare dishes from scratch before sitting down together to enjoy the results.

Goma-ae

Ingredients
- 300g tenderstem broccoli
- 6 tbsp sesame seeds
- 2 tbsp mirin or sake
- 2 tbsp Kikkoman Naturally Brewed Soy Sauce
- 2 tbsp white sugar
Method
- Peel the ends of the broccoli stalks to remove any tough parts. Boil in salted water until tender, then drain and refresh in iced water.
- Lightly toast the sesame seeds in a dry frying pan.
- Grind the sesame seeds using a pestle and mortar. Add the mirin or sake, soy sauce and sugar, and continue grinding to form a thick paste. Add a little water to loosen if needed.
- Serve the drained broccoli with the sauce spooned over the top and scatter with extra sesame seeds to garnish. Serve cold.
Traditionally, this dish is made with spinach rather than broccoli, but green beans also make a great alternative.
