Bao Buns with Salmon

Asian style marinated salmon with Ponzu dressed salad in a bao bun. Part of Kikkoman's Street Food recipe collection for Foodservice.

  • 900g raw salmon
  • 100ml Kikkoman Naturally Brewed Soy Sauce
  • 2 tsp honey
  • 1.5 tbsp sesame oil
  • 2 tsp grated ginger
  • 5 cloves of grated garlic
  • 20 bao buns
  • 20 lettuce leaves
  • 1 cucumber
  • 3 tsp Kikkoman Lemon Ponzu Sauce
  • sprouts


  • 100ml mayonnaise
  • 100ml sweet chilli sauce
  • 3 tsp Kikkoman Naturally Brewed soy sauce
  • Chilli flakes (optional)


Remove the skin from the salmon. Mix Kikkoman soy sauce, honey, sesame oil, ginger and garlic. Pour over the salmon and let it marinate for 30 minutes. Bake for 20 minutes at 145 degrees – or pan fry until it flakes apart easily. Shred the salmon a little while pouring over some of the marinade from the pan.

Cut the cucumber into thin strips and marinate with Kikkoman Ponzu. Mix the ingredients for the dressing.

Assemble the baos with a bit of lettuce, cucumber, salmon and sprouts.
