A light and healthy stew of vegetables in a rich tomato sauce which is perfect for summer/autumn. Serve with rice or good bread if desired. Suitable for vegetarians.

  • 1 onion, peeled
  • 1 pumpkin or squash, peeled and deseeded
  • 1 aubergine
  • 2 large tomatoes
  • 1 clove garlic, crushed
  • 4 tbsp olive oil
  • 6-7 tbsp Kikkoman Naturally Brewed Soy Sauce
  • 1 tbsp rice vinegar or white wine
  • 1 tsp sugar
  • 200ml tomato juice
  • basil leaves
  • chilli powder


Chop the vegetables into cubes. Fry them on a medium heat in the oil together with the garlic in a saute pan. Add the Kikkoman soy sauce, vinegar, sugar and tomato juice and bring to the boil. Allow to simmer gently for 25-30 minutes until the vegetables are tender and the sauce thickened. Sprinkle with fresh basil and a little chilli powder before serving warm.
