

Kikkoman Soy and oyster marinated Mackerel, celeriac and fennel salad

This mackerel dish would make a lovely starter on a restaurant menu. The fish is marinated in a Kikkoman soy and oyster brine.
Preparation
Step 1
Cut the mackerel into desired shape, blend the oyster with the soy, water and lemon juice. Pour over the mackerel and allow to marinade for 1 hour. Drain and pat dry.
Step 2
Finely cut the celeriac and fennel into matchstick fine pieces and mix with the zest and juice of the lemon and lime and a pinch of salt, allow to rest for 15 minutes.
Step 3
To serve place mackerel on the plate, chop the dill and mix through the celeriac and fennel, add the pollen. Place some next to the mackerel and serve.
