Steamed Haddock on Lemon Spinach
If you fancy a light meal or want something healthy then this steamed haddock with spinach recipe is spot on.
Line a steamer with some baking paper then add the fish in a single layer.
Mix together the oil, soy sauce, wine and garlic and pour over the fish. Scatter the ginger over the top then place the steamer over a pan of simmering water and steam for around 5 minutes, or until cooked through.
In the meantime, stir fry the spinach in a lightly oiled wok until wilted. Add the lemon juice and toss.
To serve, distribute the spinach between four serving plates then top with the fish and toasted pine nuts.
