

Easy quinoa bowl with citrus battered prawns and cucumber salad
A simple, delicious recipe of crispy lemony prawns on a bed of herby quinoa with chilli & sesame flecked cucumbers – who wouldn’t want this for lunch?
Preparation
Step 1
Boil the quinoa according to pack instructions until it gets tender.
Step 2
Meanwhile, beat the egg with Kikkoman Ponzu, lime zest and flour. Coat the cleaned prawns in this batter and fry in hot oil.
Step 3
Cut the cucumbers into thick slices, mix with chopped chili, chopped chives, lemon zest, Kikkoman Ponzu and sesame seeds. Mix the chopped coriander with the cooked quinoa. Divide everything between 2 bowls and serve.
