Umami Beef Burgers

Ingredients
For the patties
- 1 onion
- 1 garlic clove
- 400 g minced beef
- 3 tbsp. Kikkoman Naturally Brewed Soy Sauce
- 60 g grated cheese (e.g. Mozzarella and Cheddar)
- ¼-½ tsp. ground cumin
- ¼-½ tbsp. smoked paprika
- ½ tsp. freshly ground black pepper
- Approx. 2 tbsp. vegetable oil
Spreads and toppings
- 2 gherkins
- 2 tomatoes
- 8 lettuce leaves
- 40 g mayonnaise
- 1 tbsp. Kikkoman Ponzu
- 40 g ketchup
- 1 tbsp. Kikkoman Naturally Brewed Soy Sauce
- 4 burger buns
Method
Peel the onion and garlic. Dice the onion and finely chop the garlic cloves. In a bowl, mix the minced beef, soy sauce, onion, garlic and cheese. Season with cumin, paprika and pepper. Leave to rest for 15 minutes.
Divide the meat mixture into 4 equal portions. Shape into burger patties and fry them in hot oil for 4-5 minutes on each side.
Slice the gherkins lengthways. Wash, de-stem and slice the tomatoes. Wash the lettuce and spin dry.
Mix together the mayonnaise and ponzu sauce to make a spread. If you like you can toast the burger buns briefly under a grill on in a pan.
Spread mayonnaise onto the lower half of the bun. Top with gherkin, tomato, lettuce leaves and a patty. Spread ketchup onto the other half burger bun, place on top of the burger and serve.
