Stir-fried noodles with mushrooms and pork
Noodles, pork and mushrooms are quickly stir-fried together in this healthy recipe

- 400g lean pork, cut into strips
- 3tbsp Kikkoman Naturally Brewed Soy Sauce
- 1tbsp toasted sesame oil
- ½tsp ground chilli
- 200g egg noodles
- 1tbsp sunflower oil
- 200g mixed mushrooms, sliced
- 75g toasted cashew nuts
- 1 bunch spring onions, chopped
- 150g baby spinach
- 1-2tsp honey
Place the pork in a dish with 2tbsp of the soy sauce, sesame oil and chilli. Mix well and leave to marinate for at least 15 minutes.
Cook the noodles according to the pack instructions and rinse well in cold water.
Remove the pork from the marinade, drain and reserve the marinade for later.
Heat the sunflower oil in a wok or non-stick frying pan, add the pork and stir fry for 3-4 minutes then put to one side.
Add the mushrooms and cashew nuts to the wok and stir-fry until the mushrooms are golden. Then add the spring onions and pork and stir-fry for 1-2 mins. Add the cooked noodles and baby spinach and stir-fry for 1-2 minutes. Finally, add the marinade, remaining soy sauce and honey. Bring to the boil and serve.
