Soy marinated cod, fennel, dill, apple

Ingredients
Soy marinated cod
- 4 125g cod fillets
- 50ml Kikkoman Naturally Brewed Soy Sauce
Fennel apple salad
- 1 fennel bulb
- 4 sprigs dill
- 40g sesame seeds
- 1 Granny Smith apple
- 5 sprigs fresh coriander, leaves picked
- 1 pinch salt
- lemon juice
Method
Begin by marinating the cod in the soy sauce for 20 minutes, remove the fish and pat dry
Slice the fennel very thinly or use a mandolin and place in a bowl. Combine with a pinch of salt, squeeze of lemon juice and some chopped dill
Roast the sesame seeds under the grill until golden. Peel and core the apple and cut into thin sticks.
Preheat the oven to 200°C/gas mark 5
Place a large non-stock pan on a high heat with tiny dash of oil. Evenly sear the cod for approximately 1 minute on each side. Place in the oven for 3 minutes then rest for 4 minutes out of the heat to complete cooking.
Mix the fennel salad further and place into the middle of each plate. Lay the cod on top of the salad, garnish with the coriander leaves and serve immediately
