Minced beef is cooked with an oriental dressing made with Kikkoman soy and stuffed into tacos

East Meets West Vinaigrette
- 10ml toasted vegetable oil
- 60ml extra virgin olive oil
- 15ml clear honey
- 10ml Dijon mustard
- 30ml rice wine vinegar
- 20ml Kikkoman Soy Sauce
- 400g minced beef
- 4 tomatoes, chopped
- 2 green peppers, deseeded and chopped
- Handful fresh rocket, torn
- 4 large taco shells
- Creme fraiche, to serve
- Cheddar cheese, grated, to serve
Shake together the vinaigrette ingredients. Dry fry the beef over a high heat in a non stick pan until browned.
You may have to do this in batches. Return all the beef to the pan, then pour over the dressing and simmer until cooked through.
Mix together the tomatoes, peppers and rocket then stir in the mince and pour over the dressing.
Fill each taco with a large spoonful of the beef mixture, then top with a dollop of creme fraiche and a sprinkle of cheese. Serve immediately.
