Nice n Spicy Chicken with Peaches & Almonds
Winner winner chicken dinner! This grilled chicken recipe has a nice 'n' spicy marinade and is super easy to make. Ideal for summer meals

- 4 chicken breasts
- 1 onion, thinly sliced
- 5 peaches
- 100g almonds, skins removed
- Cooked rice or egg noodles
Nice 'n' Spicy Marinade
- 60ml Kikkoman Soy sauce
- 30ml clear honey
- 45ml freshly squeezed lime juice
- 2 cloves garlic, crushed
- 2 red chillies, finely chopped
- 2 cm fresh ginger root, finely chopped
Shake together all the marinade ingredients. Place the chicken breasts in a large shallow dish and pour over the prepared marinade. Refrigerate for 30 minutes.
Meanwhile peel, stone and slice three of the peaches and arrange these with the onion slices on a platter.
After 30 minutes, remove the chicken from the marinade then cook under a pre-heated grill until cooked through and nicely browed. Halve the remaining two peaches and baste with the marinade then grill with the chicken for the last 5 minutes.
To serve, slice the chicken breasts and place on the platter topped with the grilled peaches and garnished with the toasted almonds. Delicious served with a steaming bowl of rice or egg noodles.
