Cream of Parsnip and Apple Soup
An Autumnal soup which combines the sweetness of apple and parsnips with smoky sausage and is balanced with Kikkoman Soy Sauce

- 300 g potatoes, peeled
- 150 g parsnips, peeled
- 2 small eating apples, peeled, cored and quartered
- 2 shallots, peeled
- 2 onions, peeled
- 1 tbsp. butter
- 1 litre of vegetable stock
- 2 thin Mettwurst sausages or similar smoked German sausage
- 1 tbsp. cooking oil
- 100 g crème fraîche
- 1-2 tbsp. Kikkoman soy sauce
- Freshly ground pepper
- A few fresh marjoram leaves
Dice the potatoes, parsnips and apples. Finely dice the shallots and slice the onions. Heat the butter in a pan and add the potatoes, parsnips, apples and shallots and saute them until softened.
Pour over the stock, bring to the boil and simmer for 20 minutes.
Cut the mettwurst sausages into slices and fry them in hot oil together with the onion rings.
Puree the soup, add the creme fraiche and season with the Kikkoman soy sauce, pepper and marjoram.
Divide the soup between cups or bowls, top them with mettwurst sausages and fried onion rings. Serve.
