Aromatic pork with red pepper broth

A delicious soy sauce based marinade is used with pork chops and a red pepper broth in this easy recipe. Serve with rice

Ingredients
For the pork
- 4 pork loin chops
- 4tbsp Kikkoman Naturally Brewed Soy Sauce
- 2tbsp sesame oil
- 2 cloves garlic, peeled and grated
- tsp ground star anise
- Fresh coriander, to garnish
For the broth
- 280ml/10fl oz chicken stock
- 2 roasted red peppers, quartered
- 50g/2oz dried apricots
- 2 cloves garlic, peeled and grated
- 1tsp lemon zest, grated
Method
To prepare the pork, combine the soy sauce, sesame oil, garlic and star anise in a large dish, add the pork chops and leave to marinate in the fridge for a couple of hours, turning occasionally.
Meanwhile make the broth. Add all the ingredients to a saucepan and simmer over a low heat for around 30 minutes. Remove from the heat and blend to reach a smooth consistency.
When ready to cook, place chops under a pre-heated grill for 10-15 minutes, turning halfway through cooking time. Serve each chop with the broth and a bowl of jasmine rice.
