This particular miso soup has a sweet to slightly salty flavour and a light hue - hence its name, shiro, which means white in Japanese.
Soybeans and rice, fermented for no longer than two months, form the basis of this delicious soup. But it also contains many other valuable ingredients that make it a particularly nourishing meal. In addition to spring onions, there is also wakame seaweed - rich in iodine, vitamins, minerals and antioxidants, and yaki-fu; Japanese dry-baked wheat, which is an excellent source of carbohydrates.
