Tofu nuggets in corn wraps with spicy mayo. Part of Kikkoman's Street Food recipe collection for Foodservice.
- 1 batch of tofu nuggets, made from 500g firm tofu (see recipe for Tofu Nuggets)
- 10 corn wraps
- 1 fennel
- 2 carrots
- salad leaves
- 200ml mayonnaise
- 2 tbsp Kikkoman ponzu
- 1 tsp turmeric
- 1 tsp hot sauce (e.g Tabasco red sauce)
- 1 tbsp black sesame
Cut carrot and fennel thinly on a mandolin. Put in iced water to make them more crunchy.
Heat the wraps and spread with a bit of the dressing. Top with salad leaves, tofu nuggets, fennel, carrot and mint. Fold gently.
