Ramen Noodle Cups

A flavourful Asian style soup with noodles, pulled chicken and vegetables. Part of Kikkoman's Street Food recipe collection for Foodservice.

Ingredients
- 2.5 l chicken stock
- 100ml Kikkoman Naturally Brewed Soy Sauce
- 2 tbsp sesame oil
- 4 tbsp rice vinegar
- 300g wheat noodles
- 500g steamed pulled chicken breast (marinate in Kikkoman Soy Sauce or Teriyaki Marinade first for more taste)
- 4 pak choy
- 2 peppers
- 4 spring onions
- 150g enoki mushrooms
Method
Bring the chicken stock to a boil. Cook the noodles in it. Drain (back in the pot) and add them to cups alongside chicken, coarsely chopped bok choy, peppers, onions and mushrooms.
Bring the stock to a boil again and season with Kikkoman soy sauce, sesame oil and vinegar. Pour the hot stock over the noodles and vegetables.
