Mini Salmon Tartare Steaks with Ponzu
Fresh seared salmon bites with zingy Kikkoman Ponzu dipping sauce. Part of our series of Japas (Japanese tapas recipes for chefs).

- 200g salmon
- 1 pc spring onion
- 80g white radish
- 1-2 cloves garlic
- 1tbsp olive oil
- Seven spices shichimi or chilli
- Kikkoman Ponzu Citrus Seasoned Soy Sauce
Cut salmon into one evenly trimmed block, just like for sashimi. Sprinkle with a pinch of salt.
Slice garlic cloves and fry until crispy. Grate white radish and mix with Kikkoman Ponzu Citrus Soy Sauce.
Preheat olive oil in a frying pan over a high heat and fry the salmon on each side briefly to sear the surface.
Remove the fish from the pan and allow to cool slightly. Cut into slices of desired thickness and arrange on the plate. Garnish with the garlic crisps, sprinkle with chilli and serve with Kikkoman Ponzu and white radish for dipping.
