  • 500g macaroni
  • 1 broccoli, chopped
  • 30g butter
  • 2 tbsp flour
  • 500ml milk
  • 150ml cream
  • 150g cream cheese
  • 100g strong cheddar
  • Nutmeg to taste
  • 2 tbsp Kikkoman Naturally Brewed Soy Sauce
  • 2 tbsp apple vinegar


Boil the pasta and blanch the broccoli.

Melt the butter and add the flour. Cook the roux for a few minutes, don’t let it burn.

Add the milk and bring to a boil while whisking. Add cream and cream cheese and cheddar. Season with nutmeg, Kikkoman soy sauce, apple vinegar and black pepper.

Mix in the pasta and two thirds of the broccoli. Save the last for the topping.

Let it rest a few minutes before serving. Top with broccoli.
