Heritage tomato salad
This light and refreshing dish for heritage tomato salad is an ideal summer recipe, created by Michelin Starred chef Simon Hulstone
- Selection of coloured heritage tomatoes
- 2 cucumbers peeled and juiced
- 25ml Hendricks gin
- 100g sugar
- 25g glucose
- 50ml buttermilk
- 4 scallops
- Kikkoman soy sauce
- Borage flowers
Cut the tomatoes into odd shapes and place in bowl in bowl utilising all the colours, slice the scallops thin and brush with Kikkoman soy sauce allow to marinade for 10 minutes.
Mix the cucumber juice, gin, buttermilk, sugar and glucose together and place in ice cream machine, churn and set aside , this should be made in advance.
Place a scoop of the sorbet on top of the tomatoes, scatter the marinated scallop on top as well and garnish with the borage flowers.
