Croquettes with tofu and vegetables
Golden tofu, carrot, mushroom and green bean fritters suitable for vegetarians. Part of our series of Japas (Japanese tapas recipes for chefs).

- 400g soft tofu
- 30g carrot
- 2 pcs shiitake mushrooms
- 5 pcs green beans
- 2/3 tsp salt
- 1 tsp sugar
- 1 pc egg
- 1.5 tbsp potato starch
- Kikkoman Naturally Brewed Less Salt Soy Sauce
Put something heavy on the tofu and leave it weighted for 1-2 hours. Remove moisture.
Chop carrot and green beans into strips of 3cm and precook. Remove stems from the shiitake and slice thinly.
Process tofu in food processor until smooth, add salt, sugar, egg, and potato starch. Mix well. Add precooked beans and carrots and shiitake. Mix all ingredients well.
Form small balls and fry at 170C. Turn a few times and fry until golden brown for around 6 minutes. Drain on kitchen paper.
Serve hot with mustard and Kikkoman Naturally Brewed Less Salt Soy Sauce for dipping.
