  • 500g couscous
  • 1 l boiling water
  • 3 tbsp Kikkoman Naturally Brewed Soy Sauce
  • 250g boiled chickpeas
  • 2 carrots
  • 1 small aubergine
  • 1 large red onion
  • 1 pepper
  • 1 large sweet potato
  • 4 tbsp olive oil
  • 3 tbsp Kikkoman Naturally Brewed Soy Sauce
  • 1 tbsp cumin
  • 1 tbsp smoked paprika
  • 2 tsp ground coriander seeds
  • 1 tsp black pepper


  • 300ml natural yoghurt
  • Fresh mint
  • Fresh coriander


Cover the couscous with boiling water and soy sauce. Cover the bowl with foil and let it rest for 15 minutes.

Cut carrots, aubergine, onion, pepper and sweet potatoes in 1x1 cm cubes. Mix with chickpeas, olive oil, Kikkoman soy sauce and spices. Bake for 15 minutes at 180 degrees.

Mix the vegetables with the couscous. Add to cups and top with yoghurt mixed with finely chopped mint and fresh coriander.
