Cabbage pancakes with pork (Okonomiyaki)

Okonomiyaki is a Japanese savoury pancake containing a variety of ingredients. Part of our series of Japas (Japanese tapas recipes for chefs).

  • 125g wheat flour
  • 250ml fish stock dashi (or bouillon)
  • 1 pc egg
  • 100g pointed cabbage
  • 1 pc spring onion
  • 100g pork neck or belly, sliced thinly
  • 3-4 pc chives
  • a bit Mustard
  • a bit Kikkoman soy sauce
  • a bit mayonnaise
  • a bit katsuobushi (bonito flakes)
  • a bit marinated pink ginger
  • 2 tbsp cooking oil


Cut cabbage and spring onion into pieces of 2-3cm, chop chives finely and slice pork into strips of 3-4cm.

Mix fish stock, egg white and flour in a bowl. Add chopped cabbage and spring onion and mix well again.

Preheat oil in a frying pan and form small pancakes, fry on a medium heat. Put slices of pork on each pancake and sprinkle meat with salt and pepper. Turn pancakes and fry on the side with the meat. Turn again and fry until golden and done.

Garnish with mayonnaise, mustard and Kikkoman soy sauce, sprinkle with chopped chives, katsuobushi and marinated pink ginger.
