Ingredients

  • 2 salmon steaks/fillets, around 200 g
  • 50ml Kikkoman Soy Sauce
  • 1 stalk finely-chopped lemon grass or 1 tsp grated lemon peel
  • ¼ tsp chilli pepper sauce
  • 1 tsp ground ginger
  • ½ tsp bruised coriander stalks
  • 1 tbsp honey

Salmon in lemongrass & ginger marinade, with coriander salsa

Preparation time: 15 minutes, plus 30 minutes for marinating
Cooking time: 12 minutes

Method

Mix together Kikkoman Soy Sauce, lemon grass, sambal oelek chilli pepper sauce, ginger and coriander stalks, pour the marinade over the salmon and let it marinate for at least 30 mins in the fridge.

Place the salmon on a baking sheet, drizzle with honey and bake it for around 12 min. at 210 °C. For the salsa, chop the chillies, finely chop the spring onions and mix with coriander leaves. Drizzle the salmon with salsa and serve with rice or noodles.
