Oriental Salmon and Chilli Noodles

Ingredients
- 2 salmon fillets
- 1 tbsp Kikkoman soy sauce
- 1 tbsp sunflower oil
- 1 tbsp grated ginger
- 1 pinch five-spice powder
- ½ tsp sugar
- 3oz medium egg noodles
- 3 spring onions, shredded
- 1 green chilli de-seeded and finely chopped
- Handful fresh coriander, finely chopped
- ½ tsp sugar
- 1 tsp sesame seeds, toasted
Method
Skin salmon and cut into 2cm cubes. Mix all marinade ingredients in bowl and turn salmon around in it to coat well.
Cook the noodles for 4 mins or according to packet instructions. Drain, rinse in cold water and drain again.
Heat a large non-stick pan or wok and cook the salmon pieces on all sides till dark brown. Keep warm on a plate.
Add noodles to pan with any remaining marinade and toss well. Stir in spring onions, chillies, coriander and sesame seeds. Mix well and when hot, top with the salmon pieces. Scatter a few coriander leaves on top.
