Pan-fried Beef with Broccoli

Ingredients

  • 600g lean beef fillet
  • 4 level tbsp. cornflour
  • 6 tbsp. Kikkoman soy sauce
  • 1 tsp. sugar
  • 1 tsp. fresh ginger, chopped
  • 1 clove of garlic, crushed
  • 1 onion, diced
  • 500 g broccoli
  • 3 tbsp vegetable oil
  • boiled rice

Method

Cut the beef into thin slices and put into a dish. Mix 2 tbsp cornflour and 3 tbsp soy sauce with the sugar and ginger and garlic and pour over the beef slices. Leave the beef to marinate for at least 15 minutes.

In the meantime, wash the broccoli, remove the florets and halve them. Peel the stems and cut into small, narrow strips.

Mix together the remaining 2 tbsp cornflour and 3 tbsp soy sauce with 350 ml water.

Heat 1 tbsp oil over a high heat in a large frying pan or wok. Add the meat, fry for 1 minute, stirring continuously, then remove from the pan. Heat up the remaining oil in the same pan or wok and fry the broccoli stems, florets and the onion, stirring continuously, until the vegetables soften but retain a slight crunch.

Add the meat and the soy sauce and cornflour mixture and bring to the boil. Simmer until the sauce thickens. Serve with immediately with boiled rice.
