Oriental Tacos
Ingredients
- 400g minced beef
- 4 tomatoes, chopped
- 2 green peppers, deseeded and chopped
- Handful fresh rocket, torn
- 4 large taco shells
- Crme fraiche, to serve
- Cheddar cheese, grated, to serve
Method
Shake together the vinaigrette ingredients. Dry fry the beef over a high heat in a non stick pan until browned.
You may have to do this in batches. Return all the beef to the pan, then pour over the dressing and simmer until cooked through.
Mix together the tomatoes, peppers and rocket then stir in the mince and pour over the dressing.
Fill each taco with a large spoonful of the beef mixture, then top with a dollop of crme fraiche and a sprinkle of cheese. Serve immediately.
