The +k School of Cookery

Welcome to the +k school of cookery, with Dean Edwards

Listen to Dean Edward's top tips for celebrating Chinese New Year.

If you have a bottle of Kikkoman Soy Sauce in your cupboard chances are you mainly use it on your egg-fried rice and stir fries. Nothing wrong with that, it tastes great! But Kikkoman Soy Sauce is so much more than an oriental food condiment – it is the perfect all-purpose seasoning for your favourite, everyday dishes.

TV chef Dean Edwards shows you how to use Kikkoman in his favourite dishes in the "+K School of Cookery" webfilms. We hope these fun step -by-step webfilms and Dean's handy hints and tips will help show you the many ways that soy sauce can be used to make a good dish taste even better. Dean uses Kikkoman in his kitchen frequently as a seasoning and says: "Even though you can't actually taste the soy sauce in the end result, it makes a world of difference as Kikkoman brings out the flavours of the other ingredients"

This is because Kikkoman is rich in the fifth savoury taste sensation: umami. But do not assume that all soy sauces are the same, as it is the four simple ingredients and lengthy brewing process which gives Kikkoman its complex taste and aroma, making it as versatile as salt, but packed with more flavour. We hope you enjoy Dean's masterclasses and recipes and you will feel inspired to add a splash of Kikkoman in your everyday meals!

Dean's top tips

I always keep a bottle of Kikkoman next to my cooker, it's great for seasoning British classics like beef and ale stew to enhance simple flavours. I even add a dash to season my cooking liquor when boiling up pasta.

Kikkoman is great for glazing your turkey at Christmas, it gives the skin a wonderful flavour, I also add a dash to my cranberry sauce, great for balancing the sweet and sour flavour of this essential Christmas accompaniment.

Kikkoman Soy Sauce is so versatile. In summer, for me a BBQ is all about the rack of ribs, cooked very gently in a low oven until nearly falling off the bone then glazed with a kickin BBQ sauce made with Kikkoman and caramelized over the scorching hot coals. Delicious!

If you are not very confident in the kitchen remember that cooking is all about having fun and trying things out, even the best chefs make mistakes! It's about having the confidence to cook the things you like to eat. The most important tip is to not be afraid to season your food, but remember you can always add more, you can't take it away!

You can use Kikkoman in your favourite meals, not only stir fries. One of my favourite meals to cook is my grandmother’s recipe for lamb and tomato bredie, a spicy South African stew. Over the years I have made this recipe my own and adding a dash of Kikkoman really brings out and intensifies the flavour of the tomatoes. Beautiful!

I love cooking for friends, but sometimes, it's hard to feed them as there is always a level of expectation - you can go as fancy as you like but I find a good well flavoured home cooked meal is usually the ticket. Let's be honest when you have friends over you don't want to be in the kitchen all night slaving over a hot oven, you want to be enjoying the time with your guests, so a great option is a one-pot wonder like my chicken and chorizo recipe with cous cous. Saves on the washing up too!

Kikkoman is a great ingredient if you are watching your weight. Without getting too scientific, Kikkoman has the Umami Effect (the fifth taste sense - savouriness) which means when paired with other umami-rich ingredients such as mushrooms, Parmesan cheese and tomatoes to name a few, it ramps up the natural flavours of the ingredients. You won't need to add a big knob of butter to your mushrooms to get flavour into them, so it's a healthier option when cooking. Kikkoman doesn’t contain any fat.

None of these recipes use salt as Kikkoman provides all the necessary seasoning required.
